8×8 Fresh Apple Cake

Makes 6 servings
¼ cup butter
1 cup granulated sugar
1 large egg, slightly beaten
1 cup sifted, all-purpose flour
1 teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon ground cinnamon
¼ teaspoon salt
2 large or 3 small Granny Smith apples, peeled, cored and sliced
Lightly sweetened whipped cream (optional)
Freshly grated cheddar cheese (optional)
Preheat oven to 350°. Lightly grease an 8×8-inch square baking dish and set aside.
In a large mixing bowl, beat the butter with a wooden spoon until creamy. Gradually add the sugar, beating until the mixture is light and fluffy. Add the beaten egg and blend thoroughly.
Sift the flour again with the baking soda, nutmeg, cinnamon and salt. Add half the flour mixture to the creamed mixture. Stir in the apples, followed by the remaining ingredients.
Spoon the batter into the greased baking pan. Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan. Cut into squares and top each piece with a dollop of whipped cream and cheddar cheese.
