Baked Chicken Croquettes

1 chicken bouillon cube
3 Tbsp boiling water
1/2 Cup mayonnaise
1/2 tsp salt
1 tsp grated onion
1 Cup soft bread crumbs
1/4 Cup dry bread crumbs
2 Cups cooked chicken

Dissolve bouillon cube in water. Combine next 3 ingredients; stir in bouillon. Add chicken and soft bread crumbs. Shape into 6 small croquettes with wet hands. Dip in dry crumbs to coat. Place on ungreased baking sheet and bake at 450-degrees for 15 minutes.

2 Tbsp butter
2 Tbsp flour
1/4 tsp salt
1 Cup milk
Cheddar cheese, to taste

Melt butter over low heat. Stir in flour and salt until smooth. Add milk. Stir constantly over medium heat until thickened. Stir in cheddar cheese, if desired.
