3 lbs. stewing beef, cut into cubes
Salt and pepper, to taste
10 diced, boiled potatoes
1/3 cup minced onion
3 Tbsps. butter
2 Tbsps. chopped parsley
3 eggs, beaten

2/3 cup shortening
2 cups flour
2 tsps. baking powder
1/2 tsp. salt
3-5 Tbsps. cold water
Filling: Cut stewing beef into cubes. Cover with water. Add salt and pepper and simmer for two hours, or until tender. Drain meat and reserve broth. Add potatoes, minced onion, butter, chopped parsley and beaten eggs. Mix lightly. Set aside and prepare dough.
Dough: Combine flour, baking powder and salt. Cut in shortening until mixture looks like coarse corn meal. Add three to five tablespoons of cold water, enough to make the dough the right consistency for rolling. Roll out dough and cut into four- or five-inch squares. Put about two tablespoons of the potato mixture in the center of each dough square. Fold dough over, shaping like a boy’s leg. Pinch edges together. Drop into boiling broth. Cover. Simmer 25 minutes.
Arrange “legs” on a platter. Pour broth over “legs” and serve.
