2 C. all purpose flour
2 tsp. cinnamon
1 tsp. baking powder
? tsp. salt
? C. chopped nuts

? C. butter, softened
1 C. white sugar
3 eggs
? C. milk
3 med. carrots, grated

Mix together flour, cinnamon, baking powder and salt. Beat together butter and sugar until light
and fluffy. Add eggs, 1 at a time, beating well after each addition. Alternate flour mixture and milk
into butter mixture. Stir in carrots and nuts. Pour batter into greased pan. Bake for 40 minutes or
by inserting toothpick in center and comes out clean.

? C. butter, softened
1 tsp. vanilla

4 oz. cream cheese, softened
2 ? C. powdered sugar

Beat together butter and cream cheese until smooth. Beat in vanilla and powdered sugar.
Spread on cooled cake.
? C. chopped nuts 2 T. brown sugar
Mix together nuts and brown sugar. Sprinkle on top of icing.
