CHICKEN FRICASSEE

Ingredients:
? chicken cut up
? butter for frying
? 2 tablespoons flour
? 2 tablespoons butter
? boiled rice
? 2 cups water
? 12 small white onions
? small pinch each of thyme
? celery salt and sage
Directions:
1. Roll chicken pieces in flour
2. Brown in butter
3. Add remaining ingredients
4. cook until tender, adding water so that there are 2 cups at end of cooking
5. Make gravy: Add 3 tablespoons of hot liquid to the yold of an egg and stir thoroughly
6. Mix gravy with the rest of liquid
7. Cook for five minutes
8. Pour over steamed rice.
