CHOCOLATE SAUERKRAUT CAKE

Ingredients:
? 1?2 cups granulated sugar
? 2?3 cup butter, margarine orvegetable shortening
? 3 eggs1 tsp vanilla
? 2-1?4 cups all-purpose flour
? 1 tsp baking soda1 tsp baking powder
? 1?2 cup unsweetened cocoa
? 1 cup cold water
? 2?3 cup sauerkraut, drained and chopped
Directions:
1. Cream the sugar and shortening until thoroughly blended and smooth.
2. Add the eggs and vanilla and beat until fluffy.
3. Measure the dry ingredients. Mix them together with a fork. Add to the creamedmixture along with the water, and beat to blend incompletely.
4. Stir the chopped sauerkraut into the batter.
5. Pour batter into two greased and floured 9-inch round layer cake pans, or a greasedand floured 9×13-inch cake pan.
6. Bake at 350 degrees F for 25 to 30 minutes for layer pans, or for 35 to 40 minutes for a 9×13-inch pan.
7. Cover cooled cake with cream cheese frosting.
CREAM CHEESE FROSTINGIngredients:

? 1 3-ounce package cream cheese
? 6 tbsp butter1 tsp vanilla
? 2 cups powdered sugar
? 1 tbsp milk
Directions:
1. Soften cream cheese and butter.
2. Combine all ingredients and beat until smooth.
NOTE: To make frosting spread easily, add more milk if necessary.
