CREAM FILLED COFFEE CAKE

SCALD: 1 C. milk
ADD:
½ C. sugar 1 tsp. salt
1 stick butter
Beat 2 eggs in large bowl and add above mixture. Dissolve 1 tablespoon dry yeast in ¼ cup
water and add. Mix in 3 ½ cups flour. Let rise in refrigerator overnight. Next morning, work
dough in 4 pans and spread crumbs (see below) on top and let rise. Bake at 325° for 15
minutes. Cool and split each cake and fill with following filling.
FILLING:
3 egg whites
3 tsp. vanilla
1 ½ C. Crisco
6 T. milk
Beat egg whites stiff. Add vanilla, milk and powdered sugar until spreading consistency. Cream
Crisco and add to mixture.
CRUMBS:
½ C. brown sugar
½ C. flour
¼ C. butter
Mix crumb ingredients together.
HINT: You can also make dough in morning and let rise like bread dough (work it down once).
