CREAMED CHICKEN WITH FLOATING ISLANDS

INGREDIENTS:
? 2 tablespoons butter or chicken fat
? 2 tablespoons flour
? 1/2 teaspoon salt
? Dash of pepper
? 1 teaspoon minced celery leaves
? 1 cup milk
? 1 cup chicken broth
? 2 cups cooked, diced chicken
DIRECTIONS
1. Melt butter.
2. Add flour, salt, pepper, and celery leaves. Stir until smooth.
3. Add milk and chicken broth. Bring to a boil and boil 5 minutes, stirring constantly.
4. Add chicken and heat thoroughly.
5. Serve with Floating Islands.
Floating Islands
INGREDIENTS:
? 4 cups flour
? 5 egg yolks
? 12 tablespoons butter or margarine
? Milk
DIRECTIONS
Cut together flour, egg yolks, and butter to form coarse crumbs. Add milk enough to moisten so dough can be rolled.
1. Roll dough thinly on floured surface.
2. Cut into 1-inch squares or diamond shapes. Place on cookie sheet and bake at 350 degrees until browned. You will need to watch these closely as some will finish baking before others.
3. Place Islands in serving dish and cover with chunky chicken pieces and creamy broth.
NOTE: Creamed Chicken may also be served over hot biscuits or waffles.
