3 cups sugar
1/2 cup light corn syrup
2/3 cup water
2 egg whites
1/8tsp. salt
1tsp. vanilla
1 cup walnuts chopped
In a saucepan over medium heat combine sugar, corn syrup, salt and water. Bring to a boil. Cook until thermometer reaches 265. While syrup is boil beat egg whites stiff. Very slowly while mixing at high speed stream syrup into egg whites. As the mixture thickens reduce mixture speed. Add vanilla. Continue until mixture is thick and loses it gloss. This process will take awhile about 15 minutes. Stir in nuts with a spoon gently. Drop by teaspoon onto a greased baking sheet. Allow to cool completely at room temperature. Store in airtight container.
