EASTERN SHORE WHITE POTATO CUSTARD PIE

1 pound white potatoes
? pound butter
5 egg yolks
? pound granulated sugar (1 ? cups)
1 ? lemons juiced and rind grated
5 egg whites
? tsp. salt
? tsp. nutmeg
1 rounded teaspoon baking powder
Cook potatoes in slightly salted water until tender then run through a sieve. Add butter to hot potatoes and mix well. Beat egg yolks until thick and lemony colored. Adding sugar slowly pour over potatoes and mix well. Beat egg whites for 10 minutes and fold in. Add salt nutmeg and baking powder. Sprinkle extra nutmeg over top before putting in the oven. Bake at 450 on bottom shelf for 15 minutes. Then on middle shelf at 350 degrees for 30 minutes more.
