1 cup Chili powder (heat level according to your taste)
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. ground cumin
1/2 tbsp. crushed red pepper flakes
1/2 tbsp. dried oregano (rubbed between palms to break down)
1/2 tbsp. paprika
1/2 tbsp salt
1/2 tbsp. black pepper
3 tbsp. flour
The flour acts as a binding agent. When mixing with meat, add small amounts of water to make it bind.
Mix all together and store in air tight container.
Use 1-2 tbsp.
I usually make a double batch which makes about 3 cups of seasoning.
It is good on shrimp to BBQ also. Just coat shrimp in lemon or lime juice and sprinkle seasoning on. Skewer and grill. Also good to add to Chili, burritos and even put a little into scrambled eggs.
