LIVER, BACON and ONIONS

Ingredients:

? 1 lb liver (remove the grain)
? 1 lb bacon
? 2-3 large onions
? flour
? milk
? salt and pepper
Directions:
1. Soak the liver in the milk for an hour to 2
2. When near to the end of the milk bath for the liver, fry the bacon
3. remove bacon and set aside
4. Saute the onion in the bacon grease
5. Remove the onion and set aside
6. Coat the milk bathed liver in flour (use baggie and shake or dredge on a plate)
7. Fry the liver in the bacon and onion grease
8. Serve the liver with the onion and bacon
9. Season with salt and pepper to taste
Note: The milk bath softens the liver and removes the strong taste.
