Mashed Potato Salad

8 medium red potatoes, baked then peeled
10 hard boiled eggs, peeled
1 medium onion, peeled and finely diced
2 celery ribs, finely chopped (or more to taste)
4-5 green onions chopped
mayo (not salad dressing)
salt and pepper to taste
Coursely chop up baked potatoes and boiled eggs in a large bowl. Mash with potato masher until relatively smooth. Stir in both onions, salt and pepper. Add only enough mayo to moisten, starting with about 1/2 cup. Stir and taste at this point. Add more salt or pepper and more mayo if you think it needs it. The amount of mayo depends on the kind of potatoes you use and how dry they are. You want this to have a mashed potato consistency, not wet.
Scrape into a decorative bowl, sprinkle with paprika for colour and garnish with green onion curls (green onion cut lenght-wise into slivers and soaked a bit in ice water) and radish roses.
