Mincemeat filled cookies

1 cup sugar
1 cup softened butter
3 tbs. milk
1 tsp. vanilla extract
1 egg
3 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
Mincemeat pie filling.

Preheat oven to 400 degrees F.

In large bowl, combine first 5 ingredients ? sugar, butter, milk, vanilla and egg ? and blend well. Add the dry ingredients and mix well. Gather the dough into a ball and refrigerate in plastic wrap or in a covered bowl for a half-hour or longer.
On a floured board, roll out the dough to 1/4-inch thickness
Cut dough into rounds with a 2-inch or 2 1/2-inch cookie cutter. Place half of them on ungreased cookie sheets. Place a teaspoon of the mincemeat filling in the center of each, then top with another cookie. Using the tip of your finger, press edges to seal. Use a fork to prick the top of the cookie.
Bake for 8 to 10 minutes ? until the edges are light brown. (If your oven runs hot, check them after 5 minutes). Transfer them to a wire rack immediately.
