Mincemeat Surprise Cookies

3-1/2 c. Cake flour sifted
2 t. Baking Powder
1/2 t. Salt
3/4 c. Butter or Lard
1 c. Brown Sugar, firmly packed
1 Egg
2 T. Milk
1 t. Vanilla

Mincemeat Filling:
Combine 1 c. Mincemeat 1/4 c. Brown Sugar firmly packed, and 1/2 t. Rum flavoring.

Sift all dry ingredients together.
Cream Butter; add sugar gradually cream until fluffy.
Add egg and beat well.
Then add dry ingredients alternately with milk a little at a time.
Add vanilla and blend.
Chill until firm enough to roll out.

Roll out a small amount of dough at a time 1/8-inch thick on floured board. Keep the rest chilled.
Cut out 2-1/2-inch rounds.
Place half the cookies on un-greased sheet pan.
Place teaspoons of mincemeat filling in center of each cookie and spread out to within 1/4 inch of edge.
Cut a small hole or fancy design in the center of the remaining cookies, place on top of filling and press edges together to seal.

Bake 425, 8 to 10 minutes or until lightly browned
Makes about 3-1/2 dozen
