Old Brown Candy

3 cups sugar
1 cup milk
1/8 tsp. baking soda
1/4 cup butter
1/2 tsp. vanilla
2 cups pecans chopped
In a heavy skillet caramelize 1 cup of sugar stirring constantly. In a saucepan over medium low heat add milk and 2 cups of sugar bring to a boil. Pour caramelized sugar into boiling milk. Stir until smooth. Continue to cook until mixture reaches 240 degrees. Remove from heat and add baking soda. be careful this will foam up. Add butter and stir. Allow candy to set in the pan for 20 minutes. Add vanilla and beat. Beat until mixture becomes thick and glossy. Stir in nuts and turn out onto a greased pan. Allow to cool before cutting. Store in airtight container.
