Old Fashioned Soft Molasses Cookies

4 tsp baking soda
1/4 c. hot water
4 1/2 c. sifted flour
2 tsp ginger
2 tsp cinnamon
1/2 tsp salt
1 c. shortening
1 c. sugar
1 egg
1 c. molasses
3/4 c coffee or water
Dissolve soda in hot water and set aside to cool. Mix and sift flour, spices and salt.
Cream shortening, add sugar slowly and cream until fluffy. Stir in unbeaten egg and mix well. Stir in molasses. Add sifted ingredients alternately with coffee or water, beating well after each addition. Stir in cold soda-water mixture. Drop by teaspoonfuls onto greased baking sheets. Bake at 425 degrees for about 10 minutes. Yields 4 to 5 dozen.
