Poor Man’s Dinner

I got this recipe from my ex-mother-in-law. She was from Amish ancestry. It’s a really nice easy dinner from simple ingredients.
**please excuse the not-so-exact measurements. I seldom measure and just eyeball, so use your imagination. **
Serves 4
Ingredients:
1 lb. stewing beef cut into smaller pieces
3 tbsp oil (or more if needed)
Salt to taste
1/2 tsp pepper (or to taste)
1 medium onion, diced
4 medium potatoes in small cubes
1 large can of diced tomatoes, with liquid
Instructions:
Heat oven to 400 F.
Cut the stewing beef into small chunks. About 1″? or so. Toss with the oil and put in a baking pan, large enough for separating the pieces a bit so they don’t touch each other.Spread the onion evenly around the meat.
Sprinkle with salt and pepper bake for about 20 – 30 minutes, or until the meat is nicely browned, giving it a stir every 10 minutes or so. The darker the better.
Remove from the oven and toss in the potatoes and add the can of tomatoes. Turn the oven down to 350 F and bake the dish for about 40 minutes or until the meat is tender and the potatoes are done. Sometimes it takes longer because of the tomatoes, which slows down the cooking process.
**NOTE: You can brown the meat and onions on the stove, just don’t over-crowd the pan. I used to do it that way but found it was so much easier in the oven. Not as much danger of burning and no splatters!!!**
