Scalloped Celery and Cheese

3 cups celery, diced
1 tablespoon butter
3 tablespoons flour
1-1/2 cups milk
1/2 cup celery liquid
3/4 teaspoon salt
Dash of pepper
1 cup grated cheese
1 cup buttered crumbs
Cook celery in water until tender. Drain, reserving 1/2 cup of liquid.
Melt butter. Add flour and stir until smooth. Gradually add milk and celery liquid. Cook, stirring constantly until thickened. Add salt, pepper, and cheese. Stir until cheese melts.
In greased casserole, place a layer of celery, then cheese sauce, then buttered crumbs. Repeat, ending with crumbs.
Bake at 350 degrees for 30 to 40 minutes. Makes 6 servings.
