STRAWBERRY BREAD

Ingredients:
? 2 large eggs
? 1/2 cup vegetable oil
? 1 cup sugar
? 1/2 teaspoon vanilla extract
? 1/2 tsp almond extract
? 1 2/3 cups flour
? 1/2 tsp baking powder
? 1/2 tsp baking soda
? 1/2 tsp salt
? 1 1/2 cups chopped strawberries (fresh or lightly drained frozen)
? 1/2 cup chopped nuts of your choice (optional)
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, beat the eggs until foamy.
3. Add the oil, sugar, vanilla and almond extract to the eggs and mix well.
4. In another bowl, sift together the flour, baking powder, baking soda and salt.
5. Add to the oil mixture and stir until just barely moistened.
6. Add the strawberries and nuts and lightly mix, being careful not to overmix.
7. Pour into a prepared pan and bake until nicely browned and a toothpick inserted in the center comes out clean, 50 minutes to an hour.
