SWEET PICKLES Daniel and Cevilla Yoder 7 lbs. med.-size cucumbers Boiling water (to cover) 1 qt. vinegar (not too strong) 8 C. sugar 2 T. salt 2 T. mixed pickling spice Wash pickles, cover with boiling water and let stand 24 hours. Drain. Repeat every day for 4 days, using fresh water each time. On fifth day, cut in pieces ? ” chunks. Combine vinegar, sugar, salt and spice. Bring to a boil; pour over pickles; let stand 24 hours. Drain syrup and bring to a boil. Pour over pickles again and then on seventh day, drain syrup. Bring to a boil; add pickles and bring to boiling point. Pack in hot jars and seal.
