Zucchini Brownies

I like to make these moist, delicious, Amish zucchini brownies when I
have an abundance of zucchini. You can frost, but I don’t, as they’re
quite yummy without it!

4 eggs
1 1/2 cup oil
2 cup sugar
2 cup flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
4 Tbsp. cocoa
1 tsp. vanilla
3 cups shredded zucchini
1 cup nuts

Beat eggs, oil, and sugar. Sift flour, soda, cinnamon, salt, and cocoa.
Mix well. Add vanilla, zucchini, and nuts. Mix all together and spread
on a 10 x 15 jellyroll pan. Bake at 350 degrees for 30 minutes. These
are good plain, but you may frost them.
